The white 2023 Albillo Mayor is primary and floral and has notes of herbs and pollen, a moderate 13.5% alcohol and good freshness and balance, denoted by the pH of 3.15 and 5.47 grams of acidity. The palate is fresh and serious, with a chalky feeling to it that gives it a more serious profile. This fermented and matured in concrete and 600-liter barrels and was kept with the lees for six months. 4,850 bottles and 72 magnums produced.
