This is a finicky grape to grow, so Clos Salanca are not able to make a Cap Blanc every year. When the grapes tell them to make it, it is being fermented it in large barrels to give it a bold structure but are careful not to lose the aromatics. With Cap Blanc they feel they have made the best white wine of the Priorat.
