The 2021 Blanco de Silos was produced with Albillo Mayor grapes from different vineyards in Quintana del Pidio, La Aguilera and Gumiel de Izán. They look for moderate ripeness to achieve complexity but keeping the minerality and acidity with a wine with 13.5% alcohol and a low pH (3.15) denoting freshness. It fermented in stainless steel, barrel and concrete and has good complexity and depth with balance, varietal character and a balsamic and floral character. It’s fresh and easy to drink, clean and focused. This is now sold as Ribera del Duero, as the appellation now allows white wines. 5,370 bottles were filled after six months in concrete and barrel.
